Substances for one 22 cm loaf cake:
250g | 2 cups spelt or all objective flour
2 tsp baking powder
1 pinch of salt
80g (half cup much less 1 tbsp) granulated sugar
80g ( half cup much less 1 tbsp) mild brown sugar
70 ml (1/three cup + 1 tsp) impartial vegetable oil
220 ml (1 cup much less 1 tbsp) plant milk (I used soy)
30 ml (2 tbsp) lemon juice
2 tbsp natural lemon zest (about 2 lemons)
1 tsp vanilla bean paste/ extract
Strawberry glaze
1 cup chopped recent strawberries
1 tbsp sugar
half tbsp lemon juice
1 tbsp plant milk
160g icing sugar
Directions
Preheat the oven to 175| 350F. Line a 22 cm loaf tin with parchment paper.
Sift the flour and baking powder in a big bowl.
Combine the vegetable oil, salt and sugars collectively in a medium bowl. Add within the lemon zest, vanilla and milk and stir to mix.
Add the lemon juice and whisk to mix.
Pour the moist components over the flour and whisk till simply mixed.
Pour the batter into ready pan and bake for 45-47 minutes or till a toothpick inserted close to the middle comes out clear.
Let settle down into the pan for 10 minutes earlier than transferring to a cooling rack to chill fully.
For the strawberry glaze:
