Specs: ready two doughs, one white and one purple from the addition of 23% carrot puree. Puree ready by mixing 75g carrots + 75g water.⠀
Autolysed 2 hours: A: 150g bread flour + 125g water; B: 150g bread flour + carrot puree (~150g) + 25g further water.⠀
Added levain: 20%/30g to every dough.⠀
30 min later added sea salt: 2.1%/3.5g to every dough.⠀
45 min later, lamination: unfold on 65g mashed carrot between layers then folded up as standard.⠀
Remaining bulk, 2 coil folds (dough was fairly sturdy and immune to extra folds).⠀
After 6 hours at 74-75°F, formed, into banneton, then proofed in a single day at 38°F 14 hours.
