1️⃣ LOW-WASTE BROCCOLI TATER TOTS 🥦🥔.There’s just one factor higher than a tater tot (no, it’s not a croquette 😂). It’s a low-waste tater tot! Our model makes use of the broccoli stems and potato skins to not solely make these tater tots low-waste, but additionally further nutritious too. – INGREDIENTS –

🌿 350g / 12.3oz potato
🌿 1 broccoli head (350g / 12.3oz)
🌿 1/2 onion
🌿 1/2 tsp salt
🌿 pinch of pepper
🌿 1/Four tsp chilli powder
🌿 1/Four cup dietary yeast
🌿 ketchup or vegan mayo to serve (non-compulsory)

– METHOD –

1️⃣ Fill a saucepan with boiling water and place over a medium warmth. Roughly chop the potato (go away the skins on) into 2-inch chunks and minimize the broccoli stem into 1-inch chunks. Add the potato and the broccoli stem to the boiling water and boil for five minutes.

2️⃣ In the meantime, break up the broccoli head into florets, then add them to the saucepan with the potato and broccoli stem and boil for an additional 2 minutes.

3️⃣ Drain the water from the pan and go away the potato and broccoli to steam cool for so long as attainable to let the moisture escape.

4️⃣ Preheat the oven to 220°C / 428°F fan and line a baking tray with baking paper

5️⃣ In the meantime peel the onion and finely cube it. As soon as cool, grate the potato and broccoli stem and finely chop the florets with a knife (non-compulsory: squeeze out any remaining water from the  potato and broccoli between a clear tea towel). Then switch to a mixing bowl together with the onion and remaining components and mix.
