Lemon, pistachio, and cranberry protein bars 🍋
These protein bars are nice for pre or submit exercise or anytime as an on the go snack. And so they come collectively in lower than 15min!
1/2 a lemon’s zest
1/three cup patiencefruitco no sugar added dried cranberries
1/three cup roasted and shelled pistachios
1 scoop optimumnutrition vanilla protein powder
1 scoop vitalproteins collagen powder
1/four cup lilys_sweets no sugar added white chocolate chips
1 cup cooked quinoa, cooled
1 1/four cup oats
three pitted ndmedjooldates medjool dates, chopped
2 tbsp recent lemon juice (approx 1/2 a lemon)
2 tbsp water
1/four cup pure peanut butter (or nut/seed butter of your alternative)
1 tbsp nutiva butter flavoured coconut oil
In a big bowl combine collectively the lemon zest, cranberries, pistachios, protein powder, collagen, chocolate, quinoa, and oats. In the meantime, in a small bowl microwave the coconut oil and peanut butter for 45 seconds to melt. In a blender or meals processor add the lemon juice, water, dates, and the softened peanut butter/oil. Mix till clean and the dates are utterly damaged down and blended in. Scoop the date combine into the blending bowl along with your different elements and stir every thing collectively until evenly included and it begins to bind collectively. Line an 8” cake pan with wax paper. Pour the protein bar combination on prime of the parchment.
