Kandhari Hen is a purple chilli 🌶 spiced dish from Afghani delicacies. Attempt it, and you’ll 💯 find it irresistible! 👩🏻‍🍳

**Components**
500 gms rooster with bones or boneless (as most well-liked)
6 tbsp yogurt
2 Onions paste
2 tbsp ginger garlic paste
4-5 dry purple chillies
Four inexperienced chillies chopped finely
three tsp coriander powder
2 tsp black pepper powder
2 Cups coconut milk
2 tbsp malai or recent cream
1 tsp Salt or to style
4-5 cloves
2 cardamoms
1 small stick cinnamon
5-6 complete peppercorns
2 tbsp oil
1 tbsp ghee

**Methodology**
– Marinate rooster for 1 hour with 1/Four tsp salt,2 tbsp yogurt, 1 tsp ginger garlic paste and 1 tsp black pepper powder. In the meantime, make a paste of two onions with three purple chillies and remainder of the yogurt.
– Warmth oil and ghee in a wok or pan. Add half crushed complete garam Masala (cardamom, Peppercorns, cinnamon stick). Once they crackle, add the onion paste made earlier, malai or recent cream, chopped chillies and little 1tsp salt and fry until oil leaves sides and uncooked odor of onion is gone.
– Add the marinated rooster and fry for jiffy.Add coriander powder, leftover marinade, coconut milk. Toss effectively and add 2 bay leaves and 1 cup water. Cook dinner lined on low flame for 20 minutes or till the rooster is absolutely cooked and the gravy thickens. Add 1 /2 cup water and convey to a boil, should you want extra gravy.
– Garnish with garam Masala, chopped coriander, purple chillies and serve with paratha or rice 🍚
