Couscous with Tomatoes and Pomegranate by yummyyatra ๐Ÿ˜‹
Every chunk gives you a burst of flavour and freshness!ย โค๏ธ
– 1 tablespoon olive oil (and a few extra for drizzling on prime)
– 1 cup of couscous
– 1 purple bell pepper (finely chopped)
– 2 cloves of garlic (minced)
– 1 cup of cherry tomatoes (halved)
– 1/four cup contemporary mint (finely chopped) + extra for garnish
– 1 medium yellow onion (finely chopped)
– Three inexperienced onions (Three for cooking with) 1 (for garnish) all finely chopped
– four tablespoons tomato sauce (no salt added)
– 1 teaspoon purple pepper flakes
– 1 tbsp pomegranate molasses – Salt to style
– Pepper to style

๐Ÿ… Warmth 1 tablespoon of olive oil in a deep skillet, add onions, garlic, salt, and pepper, and sauteฬ till the onions are golden brown
๐Ÿ… Add the chopped purple bell pepper to the skillet, sauteฬ, & stirring sometimes (do that for about 2 minutes)
๐Ÿ… Stir in four tablespoons of tomato sauce, 1 teaspoon purple pepper flakes, & prepare dinner for a couple of minute ๐Ÿ… Cut back warmth, and add 1 cup of couscous, 3/four cup of water, and stir nicely
๐Ÿ… Fastidiously style the water for seasoning, & alter if essential
๐Ÿ… Cowl the skillet with a lid, & depart to prepare dinner for Three minutes, on the bottom warmth setting
๐Ÿ… Flip off the warmth, take away the lid, & add the 1/four cup of mint, 1 tbsp pomegranate molasses and fluff the couscous with a fork to examine if the entire liquid has been absorbed nicely ๐Ÿ… Add the 1 cup of ready cherry tomatoes, and gently combine
๐Ÿ… Switch to a serving dish, add the remaining inexperienced onions, some extra contemporary mint, & drizzle olive oil on prime.
