Coconut and strawberry tarts (makes 6)
2 cups buckwheat
1 cup shredded coconut
1 cup dates, pitted
25ml water
three tbsp coconut oil
1 cup coconut milk
three tbsp cornflour
three tbsp water
1 tsp vanilla extract
four tbsp maple syrup
1 cup strawberries
2 sprigs of mint
4tbsp pistachios, chopped
Mix buckwheat and coconut to a tough flour in a meals processor. Add dates and coconut oil, pulsing till mixed. Add water a tbsp at a time till a dough is fashioned. Grease tart tins with just a little coco oil and press the dough evenly into the tins. Depart to relax within the freezer whilst you make the filling.
Add maple syrup, coconut oil, vanilla and coconut milk to a small pan and convey to a mild simmer. In a small dish, combine cornflour with three tbsp chilly water to type a paste. Whereas your curd is gently simmering, pour in cornflour paste, stirring as you pour. As soon as thickened, take off the warmth and permit to chill for a couple of minutes. Take away tart shells from the freezer. Pour spoons of coconut curd in tart shells and put aside within the fridge to relax for an hour, or till the highest has set. Prime with strawberries, pistachios and mint.
