Serve 2

1 crimson bell pepper – lower into slices

2 portobello mushrooms – lower into slices

1 tsp of smoked paprika

1/2 tsp of cayenne pepper

1 tsp of floor coriander

For the black beans:

1 can (400g) of black beans – drained and rinsed

2 garlic cloves – crushed

1 crimson chilli – finely chopped

1 tsp of floor cumin

1 tsp of floor coriander

For the fast pickled crimson onion:

1 crimson onion – peeled and lower into skinny slices

Loads of vinegar ( I’ve used apple cider) sufficient to submerge the onion

Serve with:

Round 200g of cooked brown rice

2 beneficiant handful of blended greens of your selection

1 avocado – lower into slices

100g of tinned or cooked candy corn

2 tomatoes – chopped

Sprinkle of chopped spring pinions

To make the fast pickle crimson onion merely add the sliced onion to a big jar. Cowl it fully with vinegar and let it sit within the fridge for 1-2 hours and even higher in a single day.
