🥇Minestrone in 25 min. 🍜 This vegan soup is the right cold-weather dinner, greens simmered in a garlicky vegetable broth with pasta and spinach. 

Recipe right here:
* 2 onions
* three cloves of garlic
* four carrots (150g.)
* 1 zucchini (courgette)
* 1 teaspoon of thyme
* 1 teaspoon of rosemary
* 1 can chopped tomatoes
* 1 tablespoon tomato paste
* 700 ml. Vegetable broth
* 200 g. White beans or butterbeans, cooked
* A handful of spinach
* 200 g. pasta or macaroni (not cooked)
* Black pepper

In a pot add chopped onions and garlic. Add chopped carrots, zucchini, thyme, rosemary and chopped tomatoes. Prepare dinner for a couple of minutes. 
Add tomato paste, Vegetable broth, cooked white beans, a handful of spinach + pasta. Let it simmer in 10-12 minutes till the pasta has cooked. 
Serve the soup heat with oven-baked bread (topped with vegan cheese), thyme, salt and pepper.

* 1 cauliflower (600-700g.)
* 240g. chickpeas, cooked (1 can)
* three cloves of garlic
* 1 onion
* three teaspoons of garam masala
* 2 teaspoons of cumin
* 2 teaspoons of ginger
* 1 teaspoons of turmeric
* 1/2 teaspoon of chili (optionally available)
* three tablespoons of tomato paste
* 2 can of coconut milk
* 1 cup water
* Salt and pepper

Preheat the oven at 200°C sizzling air. Chop the cauliflower in small bouquets. Add right into a tray with cooked chickpeas. Prepare dinner for 12 minutes within the oven. 

Chop onions and garlic, prepare dinner on a pan in olive oil. Add tomato paste, garam masala, cumin, ginger, turmeric and chili. Add the tomato paste and the coconut milk, stir till thick. Toss within the baked cauliflower into the sauce, prepare dinner for 10 minutes. Serve with recent naan, cooked rice and herbs.
